Elizabeth Knowlton

Elizabeth grew up in Holly Springs, North Carolina, and played an active role in local temples by participating and organizing Yom HaShoah services and Remembrance events since middle school. She graduated from Appalachian State University with bachelor’s degrees in both International Politics and Post-Conflict Reconstruction, with a specialization in Judaic, Holocaust and Peace Studies.

When not at NVHC, Elizabeth is working to open a non-profit ‘Pay-What-You-Can’ Cafe in Pittsboro, NC, as a co-founder with her family.
